A little while back I, or I think everyone in our community, saw butterfly pea tea absolutely everywhere on Drinkstagram. I had no idea what it was.
After some googling I’ve now realised it’s some kind of plant, haha. I saw especially my man Hee make a lot of cocktails with it and I was intrigued! I however couldn’t find the tea he used to make his suryps, but as the Godsent human that he is he kindly sent me some tea made from it! And as if that wasn’t enough, the amazing Belinda sent me some as well! These two people are AMAZING.
The most astonishing feature of the butterfly pea, whether it be in syrup form or tea, is that it’s originally blue but when mixed with a citrus component (like lemon in this case) it turns purple?! You can see in the photo above that the butterfly pea tea syrup I made is blue but changes colour immediately when mixing with the cocktail.
The flavour of it is quite “earthy”. I love tea but I’m more of an Earl Grey/English Breakfast kinda gal (PG tips for LIFE!) so I wouldn’t drink this on its own but I’m loving it in cocktails!
- 6cl Malfy Gin Rosa (pink grapefruit flavoured)
- 3cl Lemon juice (fine strained)
- 2cl Butterfly Pea Tea Syrup
- Soda water
If you’re not trying to take a cool photo with the colour change; just pour all ingredients in a glass over ice, stir and enjoy.
